Pork in red sauce with roast potatoes...

Ingredients


(Pork)1kg boneless pork
1 chopped onion
1 chopped clove of garlic
salt
black pepper
red pepper
oregano
1 cup of concasse tomatoes
2 shots extra virgin olive oil

(Potatoes)
1kg peeled potatoes
1tablespoon oregano
1 tablespoon salt
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
juice of 2 lemons
zest of 1 lemon

Preparation
(Pork)
Step1
In a medium sauce pan over medium heat add the extra virgin olive oil, the chopped onion and the chopped clove of garlic. After 3-4 minutes add the pork and saute all sides of the meet. Add 1 liter of water and let it boil for 70 minutes.

Step2
Add concasse tomatoes, some salt, some black and some red pepper and some oregano and boil for 20 more minutes.

(Potatoes)
Step1
Cut the peeled potatoes into medium pieces. Wash them very well.

Step2
Into a baking pan place the potatoes and add oregano, salt, black pepper, zest, juice and extra virgin olive oil. Stir them gently.

Step3
Add 1 cup of water and cover the baking pan with foil.

Step4
Bake in a preheated oven at 180ºC for 50 minutes. Uncover the baking pan and bake for 15 minutes. (The baking time depends on the oven.)
