Ingredients (4 serves)
8 lasagna sheets
500g spinach (chopped)
1 onion (chopped)
1/2 cup of milk
50g butter
50g flour
500ml fresh milk
150g mizithra cheese
100g kefalotyri cheese (grated)
salt
pepper
1/3 cup of extra virgin olive oil (and some for the baking pan)
Instructions
Step1
In a midium pan over midium heat put the extra virgin olive oil and the onion and stir with a wooden spatula. After 3-4 minutes add spinach and stir until wilted.
Step2
Remove from heat and add the mizithra cheese and some salt and pepper.
Step3
In a 24cm square baking pan put some extra virgin olive oil and place one layer of lasagna sheets. Spray lasagna with some milk (of 1/2 cup) and put some spinach on them. Repeat this twice. On top put the last 2 lasagna and spray with milk. (You should devide the 1/2 cup of milk into 4 parts).
Step4
In a pan over medium heat put the butter until melted. Add flour and stir for 1 minute. Slowly add the milk (500ml) and stir until the bechamel sauce thicken. Remove from heat and add kefalotyri cheese, some salt and some pepper.
Step5
Pour the bechamel sauce over the lazagna. Bake in the oven at 175 °C for 20 minutes.
