Ingredients
500g Greek filo pastry (6-8 sheets)
300g mizithra cheese
100g feta cheese
50g kefalotyri cheese (grated)
2 eggs
2 tablespoons greek strained yogurt
10 leaves of mint (chopped)
pepper
1/2 cup extra virgin olive oil
Instructions
Step1
In a bowl put mizithra cheese and feta cheese and press with a fork.
Step2
Add kefalotyri cheese, eggs, yogurt, mint and pepper and stir together.
Step3
Cut the filo pastry into 5 stripes from the small side. You should have 5 stipes per filo pastry sheet.
Step4
Grease with a brush each stripe and put 1- 11/2 teaspoon of the mixture in the bottom of each sheet and fold diagonally to form triangle.
Step5
Place triangles in a greased baking pan and grease them on top with oil.
Step6
Bake in the oven at 175ºC for 25 minutes.
