Pancakes with cheese and herbs

Ingredients
100g Feta cheese
100g Gruyere cheese
10 fresh leaves of basil
10 fresh leaves of  mint
1 onion
4 eggs
260 ml fresh milk
260 gr all purpose flour (sifted)
2 teaspoon baking powder
salt
black pepper
extra virgin olive oil for frying
some greek yogurt for serving

Instructions
Step1
Into the food processor put the onion and the herbs.

Step 2
Into a big bowl put the eggs and the milk and stir together.

Step 3
Add the flour and the baking powder into the bowl and stir together. Add the onion with the herbs, the 2 cheeses, salt and pepper.

Step4
Fry the pancakes and serve with greek yogurt.


Extra tip
You can add tomato, spinach, zuccini and many other vegetables in the mixture.
