Passion Fruit Dessert

Ingredients

250g ladyfingers (savoyard) biscuits
100g fresh milk
2 tablespoon rosewater
250g mascarpone cheese
250g whipped cream
60g caster sugar
3-4 drops liquid red food coloring

Garnish
500g frozen passion fruits
100g caster sugar
1 teaspoon corn flour

Preparation

Step 1: Cut each biscuit in half.

Step2: Mix together the fresh milk, the rosewater and the food coloring into a bowl.

Step3: Put the biscuits (one per time) into the bowl to soak for few seconds and lay them in a serving bowl or serving dish.

Step4: In a large bowl, use a wire whisk to whisk together the mascarpone cheese and the caster sugar just until blended. Then with a rubber spatula mix gently together the mixture and the whipped cream.

Step5: Place the mixture on the top of the biscuits and set aside in the refrigerator.

Step6: In a medium saucepan over medium heat, bring the frozen passion fruits and the caster sugar to boil for 5 minutes. Add 1 teaspoon corn flour and stirring occasionally. Simmer for 10-15 minutes. Remove from the heat and let the passion fruits cool to room temperature.

Assembly

Step7: Place the passion fruits on the top of the mascarpone mixture.

Step 8: Refrigerate 2-3 hours before serving.
